With regards to the going to the toilet outside, my Mum's wee Hamish ('scuse the pun) didn't pee on a walk until he was about 6months old, and even longer than that for poos! Isla on the other hand poo'd in about 5 seconds on her first ever visit to the park. She is not shy lol!
The only thing I have heard to help when their ears are starting to go up is give them lots of things to chew as it develops the muscles next to their ears which is what makes them stand up.
Personally, nobody who I have ever bumped into has attempted to rub Isla's ears, or any of the other more 'cuddly' looking dogs in the family either!
